Only one man in sports entertainment history has won a gold medal in wrestling ... and now, Cal Bishop says he's looking to change that -- telling Pro Wrestling Sheet he's training for the Olympics.

The 27 year-old -- whose NXT release was shown in full this week on WWE Breaking Ground -- says his quest for gold begins Saturday in Las Vegas where he'll compete to advance to the Olympic trials.

Cal tells us he'll be wrestling freestyle in the 125 kg. division and despite losing a little bit of strength in his shoulder from the injuries, he's ready to compete. According to the event website, the top 7 finishers per weight category earn a spot in the trials -- which take place April 2016.

"I ain't wasting no time." Bishop adds, "And now, my motivation is times 100!"
